Chocolate cherry protein pancakes from freezing Scotland!

imageI’ve been a stranger again. What a few days! My flight on Wednesday night was delayed and ultimately canceled too late at night for there to be any alternative, but to fly out the next day going via Miami which is much longer. The flight was stuffed full and I was stuck on the long haul part of the flight behind a broken chair (don’t ask). My third and last flight of the journey was late and my luggage got lost arriving 36 hours after me. The charger for my appliances (which I had in my hand luggage) broke and my spares were in my lost suitcase. Anyway, I’m up and running again… oh and the day I arrived in Scotland was the coldest day of the year so far and the first day it had rained in weeks… and then it snowed…….anyway. I’m not complaining. I’m here and excited about my course.

My dad is a top man. I love the old dear to bits, but he forgot to get me my food supplies… so this morning I had to have gooimaged old plain eggs for breakfast. They were fine but I was dreaming about my chocolate cherry protein pancake.  I made up for my pancake lust by going into one of jmy favourite restaurants for lunch. I had Cullen skink (smoked haddock and potato soup) and an avocado and bacon salad with a warm balsamic dressing. I will definitely be replicating the salad as it was oh so delicious!

Anyway, been promising to share that chocolate cherry pancake with you, so here goes.

Ingredients (for one pancake)

  • 2 whole eggs and 2 whites (or your variation of choice)
  • 3/4 tablespoon of coconut flour or 1 tablespoon of almond meal or 1 scoop of protein powder
  • 1 tablespoon of cold coffee or a teaspoon of coffee extract (optional)
  • 1 tablespoon of raw cacao
  • 3/4 cup of fresh-pitted cherries or frozen cherries
  • coconut oil to fry


Beat the eggs, add the coffee and the dry ingredients and then beat thoroughly to a batter. Heat the oil in a small frying pan. Add the batter to the pan and fry until it starts to bubble. Spread the cherries and top and flip the pancake. Cook until firm and serve.

This is super delicious with a spoon of mascarpone.
