Day 12 – mangoes and pakora but no added sugar.

I’m guilty…….I bought a job lot of mangoes at the Farmer’s Market this morning. I couldn’t help myself. I also bought plenty of greens so that makes it okay. I had a funny day though. I really needed something nice to eat. Not something sweet but something nice. I racked my brains all day and it came to me just as I was making our evening meal. Pakora!!! So despite being in the middle of making dinner, I also made some pakora and had a lovely little unplanned appetizer!

I can’t give you an exact recipe because I made it up I’m afraid but here’s my guesstimates.

1/4 of a chopped onion
4 chopped cauliflower florets
1/2 of a chopped zucchini/courgette
Handful of frozen peas

Steam the above for about 21/2 minutes in the microwave

Mix together,

1 cup of gram flour (chickpea flour)
1 tablespoon of curry powder (I make my own and can share if you like – just ask!)
1/2 teaspoon of cayenne pepper
1/2 teaspoon of ground cumin
1/4 teaspoon of salt
1/4 teaspoon of baking powder
1 cup of water

(it’s gluten free too)

Add the drained steamed vegetables to the flour mixture and mix well. The vegetables should be coated.

In a shallow frying pan, heat 4 tablespoons of coconut oil. Using a tablespoon, scoop spoonfuls of the batter into your pan and shallow fry until golden. Flip and fry the other side.

Enjoy!! These are much healthier than the shop bought versions which usually contain wheat and are deep fried in vegetable oil.

Other than the pakora, here was my day

Lemon water on waking followed by a tablespoon of coconut oil

Pre gym mango (I did a pull up clinic with Crossfit)

Breakfast 4 eggs with spinach and tomato after Crossfit.

Lunch – another mango (uh-oh) and a small handful of cashews

Mid afternoon workout of 12x 200m sprints followed by 50-40-30-20-10 double unders followed by sit ups (it’s called “Annie” but I’ll call it the Mango Burner” 🙂

When I got home from the gym, I had a teaspoon of my chocolate hazelnut spread and some coconut water

Dinner – pakora followed by Thai chicken curry. I just had the chicken breast and green veg cooked in Thai spices and coconut milk. I was stuffed though as I did pig out on the pakora. Next time I’ll make a chili dipping sauce for it.image

I’m genuinely not craving sugar and what’s more satisfying is that for the last few days, I’ve gone all day without having the munchies. I’ve been telling myself to eat at certain intervals because I know I’m busy and I don’t want to burn out and start craving. When sugar was part of my daily diet, I was always looking for something to munch on. Maybe on Monday, I’ll listen to my body and see what happens.

I’ve done these sugar challenges before but this is the first time I’ve felt this good. Maybe it’s the mangoes 😉 but I don’t think it is. Maybe it’s the fat. I’m making sure I get plenty in.

Off to slice my flank steak for jerky. I have my son’s order. He also wants chocolate soufflé, cheesecake, pizza, steak and fries…..good job I can cook 🙂
