Day 14 – what can I say but awesome!

If you don’t have a pressure cooker, I thoroughly recommend that you put one on your Christmas list for Santa. They make cooking so easy. The kids had me running around all day. By 5pm, the dinner I had planned to have in the oven by 3, was still in a variety of tubs in the fridge. Out came the tubs, a few handfuls here, a few handfuls there, all in the pressure cooker, lid on and away you go. 45 minutes later…..the picture. I served it up to the kids with brown rice but I had it as it was. It was a kind of goulash. Everyone loved it!

Here’s what I ate today. Still no sugar and definitely not missing it. Tonnes of energy thank goodness but I may reappraise that when I go to Crossfit at 6am having just finished a workout at 8pm.

Breakfast – my mango pancake as posted on Facebook earlier. I could have eaten this three times over.

Snack – a banana. I had a long call today.

Lunch – green salad with cucumber, peppers, tomatoes, herbs and salt and vinegar roasted cashews.

Snack – celery and chocolate hazelnut spread (it’s still going strong)

Dinner – pressure cooker goulash made with local beef, onion, garlic, cumin, fresh local tumeric, paprika, cayenne pepper, local spinach, zucchini/courgette, local butternut squash and tomatoes.

Off to dream about my mango pancake! (For those not on Facebook, here’s the recipe, 1 whole egg, 1 egg white, a small mashed mango, 1 heaped tablespoon of ground almonds, tablespoon of shredded coconut and a pinch of nutmeg. Beat it all together and fry in coconut oil.)

Will tell you all about the kitten and the tent in the back garden for my husband tomorrow šŸ˜‰
