Day 15 – coconut water and avocados

So another action packed day. I woke at 5.30am this morning feeling like my head was in a vise. The humidity here is awful and it really gets me. I was going to miss Crossfit but I thought, what the heck, I’m suffering now, what’s a little more pain.

A glass of lemon water, a big fat juicy mango, a few push press, some rowing, billions of pull ups and a big fat blister in the palm of my hand later and I’m all good.

Did I tell you that we have just acquired a kitten. We caught a stray kitten. She’s now speyed, being fed and watered and sleeping on a soft bed in a cage. This is a bit problematic though. The kitten is called Gingerlily and she’s Quinn’s first pet(so we’ve all been told)! My other half is allergic to cats. Quinn suggested that we put up a tent in the back garden for daddy and keep the kitten in the house! She said daddy wouldn’t be lonely as the dogs are outside. When I said that wasn’t very fair she asked me if I could make some food to make daddy’s allergies go away as we had to do something as she was keeping the cat! Oh dear! This one could be tricky……watch this space…….

Anyway, another good food day. I started this program with a meal plan featuring breakfast, lunch, dinner and 2, possibly 3, snacks. I’m finding as time goes on, that I don’t need all of the food. I think to start with, as we’re fighting the sugar addiction, we get general cravings. It’s odd how our bodies work. My workouts are good and I’m not tired so all must be well.

On waking – lemon water and a pre gym mango (5.45am)

Breakfast – mango pancake and coffee (9.45)

Lunch – leftover beef goulash from yesterday (2pm)

Snack – banana (5) I didn’t need this but the banana was fresh so I couldn’t resist!

Dinner – tuna, salmon and breadfruit and avocado salad.

Drinks – coconut water, 1 coffee and loads of water

Recipe for breadfruit and avocado salad (you can replace the breadfruit with a firm potato)(serves 2)

1/2 of a roasted breadfruit or 3 medium boiled potatoes (cubed)
1 large or 2 small avocados (cubed)
1/4 onion chopped
1 clove of garlic (crushed)
Tumeric (I used a thumb size piece of fresh tumeric, grated)
1 scotch bonnet pepper or a 1/4 teaspoon of chili flakes
Juice of one small lime
2 tablespoons of coconut oil
Salt and pepper

Method

Fry the breadfruit or potato in the coconut oil and lightly brown.

Add the onions, garlic, tumeric and pepper and fry until the onions soften. Season with salt and pepper.

Remove from the heat. Add the avocado and mix through. Drizzle with lime juice and enjoy! It is pretty tasty!
