Day 3 Report – still going strong :)

Okay, so I’m still going strong after 3 days. No decline in my exercise work capacity although I am pretty grumpy. It didn’t really hit me until the afternoon when I almost broke Barbie’s arm off trying to put on what I thought was a top. I was reliably told not to be silly, it was a dress! I think we need to set up a campaign to get less provocative clothing for Barbie.

I had an eggstraordinary eating day. I know, I’m not funny. Get told as much at home every day. I just fancied eggs today so that’s what I had!

Lemon water on waking

Breakfast – 3 eggs fried in coconut oil with spinach and tomato
Snack – a whole mango and a teaspoon of peanut butter
Lunch – it’s in the picture (breadfruit roasted with cumin, garlic, onions (which I picked out), salt, pepper and Scotch Bonnet with callalloo and 3 fried eggs)
Snack – a slice of that lovely fruit and nut bread in the picture
Dinner – chicken fajitas without the tortilla (I made flour tortillas for the kids using sprouted spelt flour)

Plenty of water to drink, one green tea and 2 cups of black coffee

Here’s the recipe for the fruit and nut bread:

8oz of almond meal/flour
1 teaspoon ground cinnamon
1/2 teaspoon of baking soda
5 beaten eggs
1 teaspoon vanilla extract
1 chopped pear
4oz of figs (I used fresh)
2oz dried unsweetened apricots
2 oz of broken pecans

Mix together the flour, cinnamon and baking soda.

Mix together the eggs and vanilla.

Mix everything together and bake at 350 F for about 45 minutes in a well greased loaf tin. Allow to cool before removing from the tin.

Enjoy with some green tea.

Should cut to 12 slices. One slice is a portion!! Very easy to be very naughty with this! Store in the fridge.
