Freezer fudge – what!?

IMG_3846It’s funny how we are able to change our taste buds. Before I had my kids, I’d happily have stuffed my face with sugary foods. One of my favourite things to eat was tablet. Good old Scottish tablet. It’s kind of like vanilla fudge but it’s firmer. You make it with 1kg of granulated sugar, a load of butter and a tin of condensed milk. You actually felt your teeth scream when you ate it but OMG was it good. Note that I used the past tense! I can’t eat that stuff anymore and I used to be able to easily sit down and eat a 1/3 of the tray in a day. Yip, that was 1/3kg of granulated sugar in one day! So totally gross. I can maybe have a thumb sized amount now but that’s it. No more and I’m not depriving myself, I just don’t want it. This is what happens when you reset your body and all it takes is a little bit of willpower. No gimmicks, no pills, no transformations, no diets; just a little bit of willpower and a change of habits.

Anyway, I’m sharing my alternative to tablet. Believe me, this is every bit as satisfying as I remember tablet to be but it doesn’t make my teeth scream.

Ingredients

  • IMG_38401 cup of peanut butter (or other nut butter or tahini – you get more of a caramel taste with the tahini)
  • 1/3 cup of coconut oil (you can use butter or nut oil too)
  • 2 small or 1 large ripe banana (mashed to a pulp, no lumps)
  • 2 teaspoons of pure vanilla extract
  • Pinch of salt if you like

Method

Warm the peanut butter and the oil. Mash the bananas to a pulp. Mix everything together.

Line a tin of about 9″ by 5″ with plastic wrap. Scoop in the mixture and flatten. Pop in the freezer for about 45 minutes to an hour. Take out, cut into small squares and enjoy.

Note: this needs to be stored in the freezer. It keeps for ages but it won’t last for ages …
