I thought I would post my marshmallow recipe today. If you’re a dedicated no sugaraholic like me, you’ll be saying…..bah….next month 🙂 Well. Did you! Did you? I’m even saying no to the homemade pizza I’m making for the kids and do you know what, I couldn’t care less. Not tempted.
1 cup of water (split into half cups)
3 tablespoons of gelatin*
3/4 cup of sweetener (pure maple syrup or pure honey)
1/4 teaspoon of salt
1 teaspoon of vanilla extract
8 inch by 8 inch pan lined with parchment paper
* I use grass fed beef gelatin
Mix together the gelatin and a half cup of water until dissolved.
Mix together the other 1/2 cup of water with the syrup, salt and vanilla. Boil the mixture stirring until it reaches 240 degrees. This will take about 10 mins. The mixture should be like a sticky ball.
Add the hot mixture to the gelatin mixture and mix in either a stand mixer or in a bowl with a hand held mixer until it turns into a thick white paste. This takes about 10 minutes. Pour into the lined baking pan and leave to set.
You can coat the marshmallow in coconut, cinnamon, cocoa….if you do this, put the coating into the pan before adding the marshmallow cream to set.
The mixture will take a few hours to cool and set.
