Take your kale to the spa.

imageAm I the only person who finds greens a little bit boring! I can’t be bothered with the chomp, chomp to get through them and I’m not a salad dressing lover unless it’s a whole foods dressing. I also find most greens a little bitter.

I’m a solutions person so rather than suffer or not eat greens at all, I MAKE them tasty.

  1. I massage my greens. Yip. You heard me. I get some olive oil, a little lemon juice and some salt and I massage them, yes…..with my hands. You can use your feet too if you like but wash the feet first. I know it sounds crazy but I really urge you to try it. It just makes those raw greens so much easier to eat, less bitter and frankly, pretty tasty! Kale is particularly good massaged.
  2. I add other warm food and mix it through. My favourites additions are bacon, more bacon and even more bacon LOL. Toasted pine nuts, toasted walnuts, baked squash, roasted beets, flash fried baby tomatoes, fried eggs, fried plantain, I could go on!
  3. I flash fry the greens in warm coconut oil and garlic. I know that heating them breaks down the nutrients but I’ve yet to see any evidence that flash frying in warm oil for a couple of minutes destroys the nutrients entirely. So if it’s the difference between eating the greens and not eating them, I’ll flash fry them. I get my kids to eat them this way too. You have to do what you have to do to get results!

I thought I’d share my favourite massaged kale recipe with you. It goes really well with fish and some chopped avocado.

Massaged kale and red cabbage with garlic and ginger

(enough for 2 people)

4 large leaves of lacinato kale, leaves removed from stalks and torn into small pieces
1/2 of a purple cabbage (finely sliced)
2 tablespoon of olive oil
Juice of half of a lemon
A big pinch of salt
2 cloves of garlic (crushed)
1 teaspoon of grated ginger

Put your kale and cabbage in a large bowl. Add the rest of the ingredients and get massaging! You’ll want to massage it for about 5 minutes. The kale will become brighter in colour and decrease in volume.

Now get moozling!
